  • savoiardi cookies - 12-14 pcs.;
  • cocoa powder.

Preparation

Whip the cream at medium speed, gradually adding sugar and increasing the speed to maximum. Stop whipping as soon as the cream forms stiff peaks.

We also beat the mascarpone with a mixer, adding cognac. Mix with cream cheese until smooth.

Dip the cookies into coffee for literally 1 second. Place the savoiardi on the bottom of the tiramisu pan and cover with half the cream cheese mixture. Place another layer of cookies on top and cover it with the remaining cheese mixture. To top it off, sprinkle the dessert with cocoa powder and put it in the refrigerator for 6-8 hours.

Ingredients:

  • orange juice - 1/3 cup;
  • sugar - 1/3 tbsp.;
  • liqueur "Cointreau" - 1/3 tbsp.+4 tbsp. spoons;

  • vanilla extract - 1 teaspoon;
  • mascarpone cheese - 500 g;
  • strawberries - 750 g;
  • savoiardi.

Preparation

First, beat the cream with sugar, 2 tablespoons of liqueur and vanilla until stable peaks form. In another bowl, beat the mascarpone with 2 tablespoons of liqueur. We combine both mixtures, and our tiramisu cream without eggs is ready.

Cut the strawberries into slices. Mix 1/3 cup of liqueur with the same amount of orange juice and dip each cookie into the resulting mixture for just a second. Place the cookies in a row, cover them with strawberry slices and half the cream. We repeat the procedure and decorate the top of the dessert with the remaining berries.

  • coffee - 3/4 cup;
  • cottage cheese - 1 tbsp.;
  • zest of 1 orange;

Preparation

Grind the fatty cottage cheese through a sieve or beat until creamy using a blender. Place the cream cheese in a mixer bowl, add liqueur, sugar and orange zest, then continue beating until smooth. If the mixture is too thick, add milk, cream or Greek yogurt.

And since you’ve decided to give up raw eggs, cream will be an alternative. By the way, not a bad replacement at all!

So, after adjustments, the recipe looks like this:

  • Mascarpone cheese – 0.5 kg;
  • cream – 200 ml (fat content not less than 33%);
  • “Lady fingers” cookies – 18 – 20 pieces;
  • powdered sugar – 100 g;
  • freshly brewed natural coffee – 200 ml (chilled);
  • 2 tbsp. l. cognac, Amaretto, brandy (it all depends on preferences);
  • a bar of chocolate (preferably dark);
  • cocoa powder (for decoration).

You need to take care of the shape for the future delicacy in advance. The most convenient is the square one. This dessert looks very impressive in a glass container.

Making tiramisu without eggs:

  1. First, you need to keep the whipping cream container in the refrigerator for some time. As soon as it has cooled thoroughly, start the process (of course, the cream must also be well cooled). Add powdered sugar into the creamy mixture gradually.
  2. When the cream has thickened sufficiently, put the mixer aside. Further manipulations should be carried out exclusively with a spatula: little by little, very carefully, mix soft cheese into the cream. There is no need to rush: the more air bubbles remain, the more tender the cream will be.
  3. Pour alcohol into the cooled coffee and start dipping the “Lady fingers” in it one by one. This is where you need to act quickly, without letting the cookies get soggy. You need to cover the bottom of the mold with those chopsticks that have already taken a coffee bath.
  4. Cover the cookies with half the cream and sprinkle with finely grated chocolate. In the same way, form the second layer of dessert. Now you need to put it in the refrigerator for a full 6 hours (minimum!) and be patient. It will certainly be rewarded!

After the specified time, all that remains is to take out the dessert and, without skimping, sprinkle it with cocoa. Tiramisu without eggs is completely ready to delight with its taste everyone who is lucky enough to be invited to the table.

Experiment - so experiment! Why not make a berry tiramisu: with sweet cherries, sweet cherries or strawberries? Of course, frozen berries will not work here.

  • Savoyardi – 200 g;
  • strong coffee – 200 ml;
  • cream 33% – 450 g;
  • powdered sugar – 5 tbsp. l.;
  • dark chocolate – 40 g;
  • almond essence (optional) – 1/4 tsp.

Preparation :

  1. Beat the cream combined with powdered sugar for several minutes, achieving a dense but very delicate consistency. You should first cool them and be sure to check for freshness. Finally add almond essence.
  2. Dip each Savoyardi stick into cold coffee and place the first layer tightly together.
  3. Cover with a thick layer of cream and place a new batch of Savoiardi on top.
  4. Form the last layer of cream if you are making Tiramisu in bowls, or repeat the previous step again if you decide to create a dessert in the form of a cake.

  • flour – 75 g;
  • cream – 200 g;

  • cocoa.

Preparation:

  1. Beat 2/3 of the powdered sugar with the yolks. Do not try to make an airy mass - you just need to achieve creamy uniformity.
  2. Add the sifted (!) flour using spoons, continuing to beat.
  3. Cool the whites before you start beating. Lightly salt them and use a mixer at high speed until they form a high foam cap.
  4. Carefully add the proteins (in portions!) to the main working mass.
  5. Using a pastry syringe (take a nozzle with a diameter of about 12-14 mm) or a teaspoon, stretch out long (10 cm) sticks of future cookies on a parchment-lined baking sheet.
  6. Bake at 200 degrees until golden brown. Allow to cool before using for dessert.
  7. Beat the ricotta with the cream, adding a little powdered sugar if desired.
  8. Mix cooled coffee with liqueur, soak in Savoyardi with this liquid.
  9. Make a standard display: cookies, cream, cookies, cream. Sprinkle cocoa thinly over a level surface.
