Indeed, such a sweetness was more than exotic for oriental cuisine. In the 16th century in Turkey, the word “kurabiye” meant a small thing, which is why small crumbly cookies were called that.

Classic recipe

To prevent this from happening, having decided to drink a cup of tea with aromatic kurabye, it is better to spend time not going to the store, but baking it in accordance with GOST requirements, taking:

  • 300 g butter 82% fat;
  • 150 g powdered sugar;
  • 260 g flour;
  • 3 chicken egg whites;
  • 3 g salt;
  • 2 g vanillin.

Step-by-step preparation:

  1. Combine butter with very soft consistency with powdered sugar and vanilla. You can cope with this process manually by grinding these ingredients, or whipping until fluffy with a mixer.
  2. Add flour a little at a time to the sweet butter mixture. It may require a little less than the amount specified in the recipe, since the mass should be soft and plastic.
  3. Beat the whites into a fluffy foam along with a pinch of salt. Mix the protein foam into the dough in two or three additions. This must be done carefully so as not to precipitate the mass.
  4. Squeeze small cookies through the “Star” or “Astra” nozzle onto the prepared baking sheet (greased or lined with parchment). If desired, make centers.   1. Combine soft butter, room temperature egg whites and powder in a bowl. Then beat these products until they are as smooth as possible.
  2. After this, add the last ingredient of the dough - flour, also mixing it with a mixer. The result should be a thin dough that can be easily squeezed through a pastry cutter.
  3. Taking a culinary syringe or a bag with a suitable nozzle, place the cookies on parchment or a silicone mat. Bake kurabye for 15-20 minutes at 180 degrees until a beautiful golden color.

Traditional Baku shortbread cookies, kurabiye, are round in shape, and spices are a mandatory ingredient in the dough. If desired, the finished products can be coated with a glaze of powdered sugar mixed with pomegranate or lemon juice.

  • 240 g butter;
  • 195 g powdered sugar;
  • 150 ml milk;
  • 50 g honey;
  • 8 clove buds;

Delicacy with walnuts

The recipe for kurabye cookies with walnuts, popular among Azerbaijanis, involves the use of the following products:

  • 90 g of walnuts for the dough and additionally for decoration;
  • 150 g butter;
  • 64 g powdered sugar;
  • 1 protein;
  • 15 ml vanilla essence;
  • 230 g flour.

Baking steps:

In an ordinary home kitchen, you can use a special metal nozzle and a pastry syringe to repeat the shape of Kurabye. Unfortunately, I didn’t have the necessary equipment, so I came up with my own way of shaping cookies. I'll tell you in detail)

First, break off small balls of dough from a large ball of dough. For convenience, you can immediately place the dough balls on a baking sheet covered with parchment.

The parchment sheet does not need to be greased with anything or sprinkled with flour, since the dough for Kurabye contains a large amount of oil.

Using your fingers or the bottom of a glass, press down each ball, turning it into a flat cake. Don’t be overzealous, we need the final cakes to remain thick, at least 0.5 cm.

We make a depression in the middle of each piece (we use available kitchen utensils). I used the handle of a garlic squeezer.

Fill each cavity with thick jam. I used thick lingonberry jam, it was perfect: the sourness of lingonberries complemented the taste of the sweet dough.

It is very important that the jam for Kurabye is thick. It is recommended to mix jam that is too liquid with starch, thereby thickening it.

If you don’t have thick jam on hand, you can use candied fruits or marmalade for decoration. Remember, the colored center in these cookies is more for appearance than taste. And if, in pursuit of a generous filling, we add runny jam, at high temperatures it will flow and turn the baked goods into porridge. No one wants such a result, right?

And now the most interesting moment of preparation: we turn the circles into flowers. Using a toothpick, draw petals on the chamomile (or rather, apply the toothpick to the dough and press, leaving a mark). This activity can easily be entrusted to children - give them an ocean of pleasure!

· a glass of powder;

· 5 g ripper;

· 3-3.5 tbsp. flour.
